Mint & Limeade

Note: Lime and mint both become bitter if chopped up, so you need to be careful not to blend it too much.

Note: I used a bag of small limes. If you have big limes you probably get away with less, maybe 3 or 4?

Makes about 1¼ Litres

Limes (unwaxed), quartered

Light Soft Brown Sugar
Add to food processor and blend with 5 short pulses only!

Pour mixture into a sieve over a bowl, press out all juice, then add the rest of the water.

Mint (sprigs)
Squeeze the mint inside it's bag for a few seconds until fragrant and drop into the drink.

When we make this for the summer fair, one recipe will fill a 2L jugs (with a tray of ice added), or 3 recipes will fill the Colemans 3.8L cooler (with a tray of ice added).
