Chocolate Muffins

Makes 12 muffins
Muffin tin lined with muffin cases, grease with butter anywhere that isn't covered by the muffin cases
180°C | 350°F | Gas Mark 4
25 minutes (or until a toothpick inserted in comes out almost clean. But 25 is spot on for my oven)

1½C
Plain Flour
½C
Cocoa Powder
¾C
Caster Sugar
Gently mix with a whisk in a large bowl.
1Tbsp
Baking Powder
½tsp
Salt
1C (200g)
Chocolate Chips (white)
Whisk in, reserving some to put on top.

Milk (Whole)

Eggs
Add to measuring jug and whisk with a fork to combine.
½tsp
Vanilla Extract
Mix into flour until just blended.
⅓C
Oil (vegetable / sunflower)

Divide mixture evenly between cases. Sprinkle on reserved chocolate chips.
Bake until done.
Leave in pan to cool for at least 10 minutes before moving to a wire cooling rack.
