Pancakes (US)

Note: In the original recipe for the Sour Milk ingredient it said to use 1 carton of buttermilk and top it up with milk. But you can just use milk for the whole amount. I've also used soy milk and oat milk and they both turned out fine too.

Note: Similarly, for the Melted Shortening, you can just use butter, or margarine, or any baking spread.

Makes about 16 thick pancakes with ⅓C dipper
Big frying pan, if it's non-stick you shouldn't need to oil it
Medium heat (8 on our induction hob)
Wait for bubbles and steam to start appearing before flipping

Plain Flour
1C
Wholemeal / Brown Flour
4tsp
Baking Powder
Sift together in a large bowl.
1tsp
Bicarbonate of Soda
2Tbsp
Caster Sugar
1tsp
Salt
Add and mix in.

Eggs
2½C
Sour Milk
Add and whisk in.
4Tbsp (2oz)
Melted Shortening
Add and whisk in.
1tsp
Vanilla Extract (optional)
Whisk in.

Use a ⅓C measure to scoop the batter and pour into the hot pan. Flip when ready.
Eat with fresh fruit and maple syrup. And peanut butter if you're into it.
